This dish luxuriously uses hand-picked tencha, the raw material for matcha, and is topped with a specially formulated broth made from the umami components of bonito, kelp, and shiitake mushrooms, and brightly colored bubu arare (small rice crackers) from Kyoto.

This tea is made from re-harvested tea leaves (parent-child bancha), which have a flavor comparable to first-flush tea, and is carefully roasted to a slightly lighter temperature, resulting in a tea with excellent aroma.
Its fragrant aroma and refreshing taste make it perfect as an after-meal tea.
We are committed to using only the finest raw tea leaves (tea leaves before roasting) suitable for hojicha, and we use 100% Kyoto Uji tea.
We carefully adjust the roasting time based on the temperature and humidity of the day, paying attention to the color and aroma of each moment during the roasting process.
Instead of roasting in large batches, we strive to provide our customers with freshly roasted coffee by roasting in small batches frequently.

[How to enjoy tea deliciously]
Step 1
Sprinkle an appropriate amount of tea powder over the rice (amount of powder: 2-3g).
Step 2
Prepare hot water or Japanese tea (recommended Japanese teas: Sencha {Aofu}, Hojicha {Yabukita}).

*This tea mix contains tencha (powdered green tea), so you can enjoy the full flavor of the tea even when using hot water.
Step 3
You can pour boiling water or Japanese tea over the rice topped with tea powder.
Stir while steeping in hot water to extract the tea, and it's ready.
