The tea used in the gelato

Gokou - Red Roasted Green Tea -

This is a very rare type of roasted black tea, called "Benihojicha," which is not commonly available to the general public.
The aroma and flavor, reminiscent of chocolate, cocoa, and nuts, are incredibly addictive.

The roasting process is done with exquisite balance, resulting in a clean taste that pairs well with both Japanese and Western sweets.
It's low in caffeine, so it's also good for when you want to relax.

Sayama Kaori - Kabuse Sencha -

It has a refreshing scent that evokes a sense of sweetness.

It is characterized by a pleasant, moderate astringency that gives it a rich flavor.

This variety originates from the Sayama region and is characterized by its deep greenish-blue color and a pleasantly subtle astringency.

This tea is grown using a method called shade cultivation, where the new shoots are covered to block sunlight.

The new shoots grown under shade produce a dark green tea with less bitterness and a mellow, rich flavor.

By roasting the beans to the perfect degree, we have created a sweet flavor.
